Choosing What Bit To Use On Your Horse

Hi, I need some help with my horse. He is 7 turning 8 and we have been having some bitting  problems. He first went in a gag, but it was way to strong and he went behind the vertical. Then we switched to a copper roller D-ring, but it was way to soft and he started pulling the reins out of my hands and stretching long and low even when jumping. So we changed it into a pelham. At first he liked it, but then he started pulling down his head, therefore pulling me down and yanking the reins out of  my hand. I also have steering problems with him. I was told about the Waterford bit, but I would like first to get some advice from you before I go and buy a new bit.
